Salmon Trout Bake

SA Lockdown – Day5
This is a no fuss, quick and easy one tray bake. Total time of less than 20 minutes.
All ingredients are from @woolworths_sa but can be sourced at other supermarkets.
My first intention was to steam the broccoli and cauliflower, but I was too lazy and didn’t want to have too many things to wash up. So, I decided to do them all in one tray and the results were perfect.

Ingredients:
Salmon Trout
Green asparagus
1 packet Cauliflower & Broccoli
Olive Oil
Salt & Pepper

Method:
Pre heat oven to 200º.
Line a baking tray with foil or parchment paper.

Garlic Herb Crust
I used Coriander but you can use a combination of fresh herbs.
Chop(or use a blender as I did) a handful of herbs, 2 cloves of garlic and then mix well with the juice of half a lemon and 2tsp olive oil and seasoning.

1. Wash all the vegetables, pat dry and season with salt and pepper and a drizzle of olive oil.
2. Place the fish(skin side down) and vegetables on the tray.
3. Spread the herb mixture over the top of the fish.
4. Bake for 10 minutes or a little longer if you are using a thicker cut of fish.
