Veg Soup with a Twist

SA Lockdown – Day7
One week down, two to go…
I once did a Detox and made this soup, but now that I’m on an exercise routine where I need to up my protein intake, I decided to grill a piece of Salmon and add it to my soup.

Ingredients:
1 Onion diced
3 Carrots thinly sliced
4 Celery stalks thinly sliced
3 cloves Garlic, finely chopped or minced
1 Bay leave
½tsp Turmeric
2tbsp Olive Oil
1 can diced Tomatoes with the juice
3 cups Veg Stock
1 cup Water

Method:
1. Heat Oil in a pot and add the Onions, Carrots, Celery, Garlic, Bay leaves, Salt and Pepper and sauté for about 8 minutes, until the veg is tender.
2. Stir in the Tomatoes and Turmeric.
3. Add the Stock and Water, stir well and bring to a boil.
4. Lower the heat and simmer for another 10 minutes.

Note:
*You can garnish with some chopped Parsley.
*Grill a piece or Chicken breast or Salmon and then flake into pieces and add to the top when serving.
