SA Lockdown – Day17
This is what I did with the other half of my Fillet and served it with some oven done Sweet Potato fries.
I had about 3 steaks still left so I think I’ll do these with a Pasta.
Beef Fillet Steaks
Ingredients:
500gm Beef Fillet, sliced into the thickness of choice
¼ cup Olive Oil
2 tbsp Balsamic Vinegar
1 tsp Italian Herbs
½ tsp Garlic Powder
1 tsp Raw Honey
1 tsp Sea Salt
½ tsp Black Pepper
Method:
1. Whisk together all marinade ingredients in a small bowl.
2. Pour the marinade into a large enough zip lock freezer bag and add the steaks, press out all the air and seal the bag, and move them around to coat well.
3. Marinate for at least 3 hours.
4. Cook the steaks as desired on the grill, or you can sear it in a pan and then cook it in the oven for a few minutes.
Sweet Potato Fries (This recipe is from Ali Ebright)
Ingredients:
1 large Sweet Potato
½ tsp Garlic Powder
½ tsp freshly ground Black Pepper
2 tbsp Cornstarch
½ tsp smoked Paprika
1 tsp Sea Salt
2 tbsp Olive Oil
Method:
1. Peel and slice your sweet potato into long, thin strips. It’s important that the fries are uniformly sized for even cooking.
2. Add the strips to a large bowl of cold water and soak for at least 30 minutes (or overnight).
3. Preheat the oven to 220°C. Line a large baking sheet with parchment paper, or mist with cooking spray and set aside.
4. Drain the strips, rinse out and dry your bowl, then pat dry the strips with a clean towel.
5. Add the strips back to the clean bowl. Then drizzle evenly with the olive oil, and toss until they are evenly coated.
6. In a separate small bowl, whisk together the Cornstarch, Garlic Powder, smoked Paprika and Black Pepper until combined. Sprinkle the mixture evenly over the bowl of strips, then toss until the strips are evenly coated and the Cornstarch has soaked into the Oil.
7. Spread the strips out in an even layer on the prepared baking sheet. Be sure that they aren’t overlapping, or else they will not cook evenly.
8. Bake for 10-15 minutes. Then remove pan from oven, and take the time to flip each chip with a spatula. Rearrange so that they are evenly spaced and not overlapping again. Then bake for 10-15 more minutes, or until the fries are crispy and have begun to brown a bit on the tips.
9. Transfer the baking sheet to a cooling rack, sprinkle with your desired amount of salt, then let the fries rest for 5 minutes. Serve warm.
