When I feel like a Korma Curry and don’t have the time to make it from scratch I use Pataks Korma Curry Paste. I find this to be the best Korma Paste on the shelves.
Fish Korma Curry
Ingredients:
Pataks Korma Curry Paste – ½ glass curry paste
1 brown onion – finally diced
1 tsp tomato paste
1 tsp brown sugar
1 tsp ground ginger & garlic
300ml coconut milk
½ tsp ground cinnamon
1tbsp oil
500g fish (or chicken if you prefer) cut into pieces
Black Rice (I use the Blue Elephant Thai Cuisine)
Korma Recipe Method:
- Heat the oil in a pan or flat pot
- Sauté diced onion and cinnamon until golden brown
- Add the tomato paste, curry paste, ginger & garlic and brown sugar, stir together and simmer for about 2 minutes
- Combine the coconut milk to the mixture in the pot and simmer on low heat for about 5 minutes or until the sauce starts to thicken, stirring occasionally
- Add the fish and simmer until cooked
- As for the rice, follow the instructions on the packaging – you won’t go wrong.
