Easy Ratatouille

SA Lockdown – Day13
Aubergine or as known to some, Eggplant is one of my husband’s favourite vegetables, and tonight’s dinner was going to be grilled Salmon. So, when I asked him what he would to have as a side, he naturally went with Aubergine and seeing that I had way too many vegetables in the fridge, I thought that I’d make a quick Ratatouille, my way.

Ingredients:
1 large or 2 small Aubergines
1 medium to large Red Onion
2 large or 4 small Zucchini
1 large or 2 small cloves Garlic
1 can chopped Tomatoes
1 Bayleaf
1 tsp dried Mixed Herbs
Pinch of ground Cinnamon
Seasoned Seasalt (I use Ina Paarman’s) and Black Pepper to taste
3 tbsp Olive Oil

Method:
1. Thinly slice the Garlic.
2. Wash and cut all the vegetables into about 2cm pieces and pull the cut Onion apart.

3. Heat the Olive Oil in a pot and then add the sliced Garlic and sauté for about a minute.

4. Add all the cut veg, herbs & spices and sauté for about 3 minutes.

5. Now add the can of Tomatoes and stir well.

6. Cover and simmer until the veg is soft and cooked through, stirring occasionally.
7. I served this as as side with a piece of grilled Salmon. Grilled Fish, Chicken or Red Meat would be good.

Note:
*Add a chopped chilli if you like it spicy.
