SA Lockdown – Day19
Flammkuchen (Flame Cake) comes from the regions of the German-French border. It’s a very thin based dough in either an oval or rectangular shape and is covered with Crème Fraîche, thinly sliced onions and Bacon.
In summer I enjoy this with a nice cold glass of Pinot Grigio or in winter with a good glass of a Red.
It’s very easy to make with very few ingredients and I really hope you give it a try.

Ingredients:
Dough
300g Flour
1 tsp Salt
4 tbsp Olive Oil
200ml Water
Topping
200g Crème Fraîche (or Sour Cream)
2 Onions, finely sliced
250g Bacon, cut into thin strips
Salt & Pepper

Method:
1. Add all the Flour, Salt and 3 tbsp of the Oil into a mixing bowl and mix and then knead it into a nice dough.Form a ball with it and then smear the 1 tbsp Oil over the ball, cover and let it rest for about 30 minutes.
2. Preheat the oven to 220ºC
3. In the meantime, slice the Onions and cut the Bacon
4. Divide the dough in 2, roll it out very thinly and place on a baking sheet with parchment paper.
5. Spread the thinly rolled out dough evenly with the Crème Fraîche and then with the Onions and Bacon. Season with Salt & Pepper.
6. Bake in the preheated oven for about 15 minutes.

7. Cut and serve warm. Guten Appetit.
