Paprika Chicken Bake

SA Lockdown – Day12
At this time I’m finding that it’s all about have quick and easy to prepare meals that are also healthy. This Recipe is to serve 2.

Ingredients:
1 pack Chicken Breasts Fillets (I used the Chicken fillet strips)
1 cup Coconut Cream (Fresh cream can be substituted if you are doing dairy)
1 tbsp Smoked Paprika
¼ tsp Cayenne Pepper
Pinch of ground Cinnamon
1 clove Garlic, minced
1 tsp dried Mixed Herbs
1 Broccoli head washed and cut into pieces
Salt & Pepper to taste

Method:
1. You can either cut the meat or leave the Chicken Breast whole, wash and and pat dry.
2. Combine the Coconut Milk and all the dry ingredients and Garlic to a mixing bowl and mix well.

3. Place the Broccoli and Chicken pieces in a baking dish,
4. Pour the Coconut Cream mixture over the Chicken and Broccoli.

5. Bake at 170ºC for about 30 minutes depending on the size of the Chicken pieces.
6. Plate and serve.
