Spicy Chicken Livers

There are certain foods that I do not order in restaurants, because I am uncertain as to how much care or attention is paid to the cleaning or preparation of it. Chicken Livers are one of those items.
I like to have all the fat and blood clots removed and the Livers thoroughly rinsed.

Ingredients:
250g Chicken Livers
1 can Chopped Tomatoes
1 Onion
1 clove Garlic
1 small to medium red Chilli
¼ tsp ground Cinnamon
¼ tsp Peri Peri spice
1 tsp dried mixed Herbs
1½ tbsp Olive Oil or Canola Oil
Salt & Pepper to taste

Method:
1. Clean, wash and pat dry the Chicken Livers.
2. Dice the Onions, finely chop the Chilli and mince the Garlic.
3. Heat the Oil in a medium size pot/pan and add the Onions, Cinnamon and Chilli.
4. Add the Garlic when the Onions are translucent.
5. Now add the Tomatoes, Herbs and Spices to the Onions.
6. Simmer on moderate heat until the liquid has evaporated and the sauce has thickened.
7. Now add the Livers to the sauce, stir and cover with lid.
8. Cook for about 10 minutes, gently stirring occasionally or until the Livers are cooked, be careful not to overcook.
9. Serve with toasted Ciabatta, I served mine with toasted Charcoal Sourdough Bread.
