SA Lockdown – Day4
We tried Veganuary for the first time this year and discovered a lot of plant based food that tasted very good, and has since become a regular part of our lifestyle. Here I used the Lentil Protein Noodles which is perfect for all Vegans.
Please note that the vegetables I used here is what I had in my fridge, you can use anything to your preference.
The ingredients here are for 2 servings.
Ingredients:
Noodles
1 Red & Yellow Paprika
1 Red Onion
1 small pack Babycorn
1 small pack Snap Peas
1 packet Bok Choy
2 cloves Garlic
1 small piece
1 large Carrot
1 tbsp Peanut Oil
3 tbsp Soy Sauce
Instructions:
1. If you are using the Noodles (Wooloworths) I used, take it out of the fridge about 40 minutes before you start cooking so that it’s at room temperature.
2. Wash and cut the veg into small pieces. See pick below as to how I cut mine.
3. Heat the oil in a wok or pan and fry the garlic and ginger for about a minute.
4. Add the baby corn, carrots and onions and stir frequently for about 3 minutes, stir longer if you don’t like the veg too crunchy.
5. Now add the snap peas and bok choy and soy sauce and stir for another 3 minutes.
6. Add the noodles, stir in well and serve.
Note:
* Add a chilli finely sliced if you like it hot.
* Add a tbsp of peanut butter if you want a sort of satay flavour to it.
