Warm Salmon Salad

SA Lockdown – Day22
Salmon or Salmon Trout (if you are on a budget) would do for this light and healthy meal.

Ingredients:
Salad
1 cup Spinach
½ Red Onion
¼ English Cucumber
1 stalk Celery
1 Avocado
½ red Bell Pepper
½ yellow Bell Pepper
2 large Cherry Tomatoes
Juice of ½ a Lemon
2-3 tbsp Olive Oil
Roasted Pinenuts (Optional)
1 Clementine or Naartjie or Mandarin (Optional)
Salt and freshly ground Black Pepper

Fish
Salmon
Cajun Spice
Olive Oil

Method:
1. Wash and dry the Spinach, then remove the stems/stalks and finely cut it and place in a large mixing bowl.

2. Finely dice the Onion.
3. Chop the Peppers and Cucumber into small pieces.
4. Thinly slice the Celery.
5. Slice the Cherry Tomatoes (if you are using smaller Tomatoes, you can cut them in half).
6. Cut the Avocado into small cubes.
7. Fillet the Clementine.

8.Put all the cut/sliced ingredients(except the Clementine) in the the bowl with the Spinach.

9.Add the juice of the Lemon, Olive Oil, Salt and Pepper and toss well.
10. Place on a plate and then add the fillets of Clementine.
11. Season both sides of the Salmon and either grill or sear in a pan, leave it a little longer if you like it more well done.
12. Break or cut it into bite size pieces and place over your salad.
13. Sprinkle the roasted Pinenuts over the salad and serve.
