SA Lockdown – Day34
Zucchini noodles, or known as zoodles, are simply strips of Zucchini that are used instead of wheat pasta/noodles in traditional pasta dishes that contain carbs.
They are just vegetable, and they make they perfect the fit into a wide variety of dietary plans, including Vegan, Low-Carb, Gluten-Free, Keto and Paleo.
I made this just for the 2 of us, but had some leftover Bolognese that I froze.
Ingredients:
6 medium Zucchini
500g lean Beef Mince
1 medium Onion, diced
1 can whole Tomatoes
1 clove Garlic, minced
1 tbsp Tomato Paste
2 tbsp Beef Stock
1 Bayleaf
2 tsps Italian Herbs
1 tbsp Olive Oil
Method:
1. Heat the Oil on medium heat in a flat pot and add the diced Onions, Bayleaf and Garlic and sauté until it’s translucent.
2. Add the Mince, stir and cook until the Mince is no longer red in colour.
3. Sprinkle the Stock over the Mince and mix well. Allow to cook for about 5 minutes.
4. Add the Tomatoes, but first squash each tomato in your hand through the fingers into the pot and add the juice as well. Now add water to the can, it should be about a quarter can and add it to the Mince.
5. Add the Herbs and Tomato Paste and mix all well together.
6. Cover and simmer on lower heat until the liquid has evaporated, stirring occasionally.
7. Wash the Zucchini and cut of the ends.
8. You can either use a Spiralizer/Mandoline/Julienne Peeler or a knife. I used a knife as my mandoline and Spiralizer are both packed for our move.
Thinly slice the one side and then use the flat side to balance the Zucchini on the cutting board. Now continue to slice the the Zucchini and repeat with the rest.
9. Bring a pot of salt water to a boil and turn down the heat.
10. Gently put the thin Zucchini in the pot and ensure that the water is not bubbling. Leave it for about 2 minutes and drain. DO NOT overcook, just blanch or alternatively you can sauté in batches in a pan with some Oil.
10. Taste the Bolognese and add some seasoning if required.
11. Place some Zoodles on a plate and spoon the Bolognese over the Noodles and grate or sprinkle Parmesan over it.
