Xmas Baking….Biscotti

 

Do you have a baking tradition for Xmas?

I decided to start with some biscottis, a recipe that I’ve been using for many years.

Ingredients:
3/4 cup whole almonds
2 cups all purpose flour
3 large eggs
3/4 cup granulated white sugar
1tsp baking powder
1tsp vanilla extract
1/2tsp almond essence
1/4 tsp salt

Method:
Bake almonds until light brown, cool and chop.
Mix dry ingredients together.
Whisk eggs and liquid ingredients in a separate bowl.
Mix cooled chopped almonds in the dry ingredient mixture.
Add egg mixture to form a dough.
Half the mixture and form to log shaped dough place onto a baking sheet and flatten the log to shape.
Bake for about 35 minutes on 150 degrees.
Transfer logs to a cutting board and diagonally cut about 6-10cm thick slices.
Return to baking sheet and cake for about 12 minutes on each side.
Store in an airtight container.
